"Hans Dampf in allen Possen" means "Jack of all tricks" (a play on words for the phrase Hans Dampf in allen Gassen = Jack of all trades).
The folksongs include Hans Spielmann, Hans Naber, Hansel und Gretel and of course Hänschen klein.
